Heat a large frying pan over a medium-high heat.

Add the oil (1 tbsp) to the pan and fry the onions (1) until they turn translucent.

Add the beef mince (500 g), season well and fry for 5-8 minutes until cooked through. Drain any excess liquid from the meat.

Add the garlic granules (1 tsp), ketchup (1 tbsp) and yellow mustard (1 tbsp) to the pan and mix well, then turn off the heat.

In a separate frying pan, heat a small amount of butter (1 tbsp) until melted.

Place a flour tortilla (8) in the pan, add the mince mixture across the tortilla, top with cheese (250 g) and crinkle cut gherkin burger pickles (as needed) (if desired!) and top with another tortilla.

Let it cook for around 3 minutes, before carefully flipping and cooking on the other side for around 3 minutes, or until everything has melted together and the tortilla is looking golden.

Cut into quarters to serve. Repeat the process with the other tortillas.

To make the wedge salad, combine the iceberg lettuce (1), red and gold Santini tomatoes (as needed), sea salt and black pepper croutons (as needed), buttermilk ranch dressing (as needed) and toss it all together and serve with the quesadillas and a pot of special burger sauce (as needed).

For any leftover quesadillas, you can keep them warm in the oven – set to around 120°C fan.
